Never in my life did I think it would be OK to have biscuits. I’ve always categorized biscuits as “bad” or “unhealthy”, but these Guilt Free biscuits are only 2.2 NET CARBS! WOW! That means you are free to eat as many as you like and you don’t have to feel guilty about it (which is very important to me).
I hope you enjoy these biscuits as much as I did. I’ve developed this recipe so it’s not only delicious but super easy to make in a food processor. And don’t get me started about its perfect texture!
- 1/2 cup Almond Flour
- 1/2 cup Coconut Flour
- 1/2 cup Mozzarella Cheese shredded
- 1/2 cup Half and Half
- 4 tbsp Butter frozen
- 2 tsp Sweetener erythritol
- 1 tsp Salt
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
Preheat oven to 375F.
In a food processor combine almond flour, coconut flour and mozzarella cheese. Pulse until all combined and mozzarella is fine.
Shred the frozen butter with your food processor's grating disc and into the flour mixture.
Add baking soda, baking powder, salt, and sweetener into food processor and pulse until combined. Add half and half at the very end.
Turn the processor on and blend. The mixture will turn into a dough.
Remove the dough from the mixture and separate into 8 biscuits. The dough will not spread too much in the oven so flatten them a little.
Bake in the oven at 375F for 15 minutes or until the dough is firm and golden.
Let biscuits sit for 15 minutes out of the oven to firm up.
