To be completely honest, I had never had a daiquiri before I was faced with converting it to a low carb recipe. Thankfully for me, it was extremely easy.
I created a simple syrup by incorporating 1 cup of monk fruit sweetener with one cup of water. You can do this in a saucepan over low heat. Unlike sugar, monk fruit dissolves within minutes. I have not tried making simple syrup with erythritol or any other sugar alcohols but if you want to use erythritol, I would recommend to use the powdered form. Powdered erythritol automatically dissolves in an wet ingredient you add it to, it’s super easy.
This one’s quickly become one of my favorite cocktails but be careful, it’s two times stronger than the others.
Low Carb Daiquiri
- 3/4 oz Lime Juice fresh
- 2 oz White Rum Bacardi
- 1 oz Simple Syrup
Pour lime juice, rum, and simple syrup in a cocktail shaker. Shake together until incorporated
Pour over a cocktail glass with ice.
Garnish and Enjoy!
